The winemaking of Allegranza Tempranillo Vendimia Seleccionada 2025 focuses on extracting richness and structure while preserving varietal character. A cold maceration (5 ºC for 48 hours) precedes fermentation, enhancing color and aromatic intensity.
Fermentation takes place at controlled temperatures (24–28 ºC for 12–18 days) to ensure optimal extraction of tannins and flavor compounds.
The wine is then aged for 4 months in 1–2 year-old French oak barrels, adding complexity and integrating subtle notes of spice, toast, and vanilla.
